Ingredients

- 4 Chicken breasts or thighs
- 1/4 cup Balsamic vinegar
- 1 cup Cherry tomatoes
- 2 Bell peppers (any color)
- 1 Zucchini
- 1 Red onion
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1 teaspoon Italian seasoning
- Salt & pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Whisk together balsamic vinegar, olive oil, minced garlic, Italian seasoning, salt, and pepper.
- Toss chicken in half the marinade; let sit for 10 minutes.
- On a sheet pan, spread cherry tomatoes, sliced peppers, zucchini, and red onion; drizzle with remaining marinade.
- Nestle chicken pieces among the veggies.
- Bake at 400°F for 25–30 minutes, until chicken is cooked through and veggies are roasted.
- Broil for 2 minutes for caramelized edges.
- Garnish with chopped basil or parsley before serving.
Notes
- For extra flavor, marinate the chicken for longer if time allows.
- Feel free to substitute any seasonal vegetables you have on hand.
- Serve with a side of rice or quinoa for a complete meal.
