Description

A Mediterranean-inspired sheet-pan dinner with juicy chicken, caramelized veggies, and a tangy-sweet balsamic glaze.


Ingredients

Scale
  • 4 Chicken breasts or thighs
  • 1/4 cup Balsamic vinegar
  • 1 cup Cherry tomatoes
  • 2 Bell peppers (any color)
  • 1 Zucchini
  • 1 Red onion
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Whisk together balsamic vinegar, olive oil, minced garlic, Italian seasoning, salt, and pepper.
  2. Toss chicken in half the marinade; let sit for 10 minutes.
  3. On a sheet pan, spread cherry tomatoes, sliced peppers, zucchini, and red onion; drizzle with remaining marinade.
  4. Nestle chicken pieces among the veggies.
  5. Bake at 400°F for 25–30 minutes, until chicken is cooked through and veggies are roasted.
  6. Broil for 2 minutes for caramelized edges.
  7. Garnish with chopped basil or parsley before serving.

Notes

  • For extra flavor, marinate the chicken for longer if time allows.
  • Feel free to substitute any seasonal vegetables you have on hand.
