- 1 cup Granulated sugar
- 1 cup All-purpose flour
- 1 cup Pastry cream (vanilla custard)
- 1 tsp Baking powder
- 1/4 tsp Salt
- 1/2 cup Heavy cream
- 8 oz Semi-sweet chocolate
- 2 tbsp Butter
- Shaved chocolate or flakes for topping
Instructions
- Whip eggs and sugar until pale and thick, then fold in flour, baking powder, and salt to create a light sponge batter.
- Spread into a parchment-lined jelly roll pan and bake 10–12 minutes until just set.
- While hot, roll the cake with parchment inside to form its shape; let cool completely.
- Unroll and spread a generous layer of smooth pastry cream over the sponge.
- Gently roll it back up tightly, seam-side down.
- Make ganache by heating cream and pouring over chocolate and butter; stir until glossy.
- Pour ganache over the cake roll and top with chocolate shavings; chill slightly before slicing.
