Description

Ingredients

  • 4 Eggs (for sponge)
  • 1 cup Granulated sugar
  • 1 cup All-purpose flour
  • 1 cup Pastry cream (vanilla custard)
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Heavy cream
  • 8 oz Semi-sweet chocolate
  • 2 tbsp Butter
  • Shaved chocolate or flakes for topping

Instructions

  1. Whip eggs and sugar until pale and thick, then fold in flour, baking powder, and salt to create a light sponge batter.
  2. Spread into a parchment-lined jelly roll pan and bake 10–12 minutes until just set.
  3. While hot, roll the cake with parchment inside to form its shape; let cool completely.
  4. Unroll and spread a generous layer of smooth pastry cream over the sponge.
  5. Gently roll it back up tightly, seam-side down.
  6. Make ganache by heating cream and pouring over chocolate and butter; stir until glossy.
  7. Pour ganache over the cake roll and top with chocolate shavings; chill slightly before slicing.
