- 1 cup sour cream
- 1 tsp cinnamon

Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, granulated sugar, and melted butter. Press firmly into a springform pan and bake for 8–10 minutes; cool.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla.
- Toss sliced peaches with a little brown sugar and cinnamon. Layer peaches over crust.
- Pour cheesecake batter over peaches.
- Make crumble by mixing flour, brown sugar, butter, and optional oats until crumbly; sprinkle over batter.
- Bake for 55–65 minutes until center is slightly set. Cool completely, then chill for at least 4 hours.
- Drizzle generously with caramel sauce and top with whipped cream before slicing.
