- 2 Russet potatoes
- 1 cup Shredded cheese (mozzarella or cheddar)
- 1/2 cup Sour cream
- 2 tablespoons Butter
- 1 teaspoon Garlic powder
- Salt & pepper to taste
- Chives or parsley for garnish
- Optional: red pepper flakes
Instructions
- Bake whole potatoes at 400°F for 45–55 minutes until fork-tender.
- Slice potatoes in half and scoop out the insides into a bowl, leaving sturdy shells.
- Mash potato with butter, sour cream, cheese, salt, pepper, and garlic powder.
- Spoon the cheesy filling back into the potato shells and mound slightly.
- Top with extra cheese and a pinch of red pepper flakes.
- Return to oven for 10–15 minutes until golden and bubbly.
- Garnish with chopped parsley or chives and serve hot.
Notes
- For a spicier kick, add more red pepper flakes.
- Feel free to mix different types of cheese for varied flavor.
- These can be made ahead and reheated before serving.
