Description

Creamy, loaded potato boats baked until golden with bubbling cheese on top.


Ingredients

Scale
  • 2 Russet potatoes
  • 1 cup Shredded cheese (mozzarella or cheddar)
  • 1/2 cup Sour cream
  • 2 tablespoons Butter
  • 1 teaspoon Garlic powder
  • Salt & pepper to taste
  • Chives or parsley for garnish
  • Optional: red pepper flakes

Instructions

  1. Bake whole potatoes at 400°F for 45–55 minutes until fork-tender.
  2. Slice potatoes in half and scoop out the insides into a bowl, leaving sturdy shells.
  3. Mash potato with butter, sour cream, cheese, salt, pepper, and garlic powder.
  4. Spoon the cheesy filling back into the potato shells and mound slightly.
  5. Top with extra cheese and a pinch of red pepper flakes.
  6. Return to oven for 10–15 minutes until golden and bubbly.
  7. Garnish with chopped parsley or chives and serve hot.

Notes

  • For a spicier kick, add more red pepper flakes.
  • Feel free to mix different types of cheese for varied flavor.
