Description

Festive oat cookies shaped like wreaths, studded with tart cranberries and crunchy pistachios, finished with sweet holiday icing.


Ingredients

  • 2 cups Rolled oats
  • 1 cup Dried cranberries
  • 1 cup Shelled pistachios
  • 1/2 cup Unsalted butter
  • 1 1/2 cups All-purpose flour
  • 1 cup Brown sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 cup Powdered sugar (for icing)
  • 23 tbsp Milk or lemon juice (for icing)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Cream butter and brown sugar until light and fluffy; beat in egg and vanilla.
  3. Mix flour, baking soda, salt, and oats; stir into wet ingredients.
  4. Fold in chopped cranberries and pistachios.
  5. Roll dough into balls, poke a hole in the center, and shape into wreaths.
  6. Bake 12–14 minutes until edges are lightly golden; cool completely.
  7. Drizzle or spread icing over cookies and sprinkle with extra pistachios.
