Description
Festive oat cookies shaped like wreaths, studded with tart cranberries and crunchy pistachios, finished with sweet holiday icing.

- 2 cups Rolled oats
- 1 cup Dried cranberries
- 1 cup Shelled pistachios
- 1/2 cup Unsalted butter
- 1 1/2 cups All-purpose flour
- 1 cup Brown sugar
- 1 Egg
- 1 tsp Vanilla extract
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 cup Powdered sugar (for icing)
- 2–3 tbsp Milk or lemon juice (for icing)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Cream butter and brown sugar until light and fluffy; beat in egg and vanilla.
- Mix flour, baking soda, salt, and oats; stir into wet ingredients.
- Fold in chopped cranberries and pistachios.
- Roll dough into balls, poke a hole in the center, and shape into wreaths.
- Bake 12–14 minutes until edges are lightly golden; cool completely.
- Drizzle or spread icing over cookies and sprinkle with extra pistachios.
Notes
- Ensure the cookies are completely cool before icing to prevent melting.
- Store cookies in an airtight container for up to a week.
- For a festive touch, add colored sprinkles to the icing.
