Ingredients

  • 1 cup whole milk
  • 4 egg yolks (for custard)
  • 4 oz semi-sweet chocolate
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 whole eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp cornstarch
  • 1 cup heavy cream
  • Powdered sugar (optional, for stability)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Cream butter and sugar until light. Add eggs and vanilla. Mix in flour, baking powder, salt, and milk until smooth.
  3. Fill liners ¾ full and bake for 16–18 minutes. Cool completely.
  4. For custard: whisk egg yolks, sugar, and cornstarch. Heat milk until steaming, then slowly whisk into yolks.
  5. Return to heat and cook until thick and creamy. Stir in vanilla and cool fully.
  6. Core each cupcake center and pipe or spoon chilled custard inside.
  7. Heat heavy cream until steaming, pour over chopped chocolate, let sit for 2 minutes, then stir until glossy.
  8. Spoon or pipe ganache over cupcakes in a thick swirl. Let set slightly before serving for that creamy center reveal.
