- 1 ½ cups all-purpose flour
- 1 cup whole milk
- 4 egg yolks (for custard)
- 4 oz semi-sweet chocolate
- ½ cup unsalted butter
- 1 cup granulated sugar
- 2 whole eggs
- 1 tsp vanilla extract
- 2 tsp baking powder
- ½ tsp salt
- 2 tbsp cornstarch
- 1 cup heavy cream
- Powdered sugar (optional, for stability)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Cream butter and sugar until light. Add eggs and vanilla. Mix in flour, baking powder, salt, and milk until smooth.
- Fill liners ¾ full and bake for 16–18 minutes. Cool completely.
- For custard: whisk egg yolks, sugar, and cornstarch. Heat milk until steaming, then slowly whisk into yolks.
- Return to heat and cook until thick and creamy. Stir in vanilla and cool fully.
- Core each cupcake center and pipe or spoon chilled custard inside.
- Heat heavy cream until steaming, pour over chopped chocolate, let sit for 2 minutes, then stir until glossy.
- Spoon or pipe ganache over cupcakes in a thick swirl. Let set slightly before serving for that creamy center reveal.
Notes
- Ensure cupcakes are completely cool before filling to prevent melting the custard.
- For a richer flavor, use high-quality chocolate for the ganache.
- Optional: Dust with powdered sugar for added sweetness and presentation.
