Description

Classic Stuffed Bell Peppers are colorful bell peppers baked until tender and filled with savory beef, rice, tomato sauce, and melted cheese.


Ingredients

  • 6 Bell peppers (red, yellow, or green)
  • 1 lb Ground beef or turkey
  • 1 cup Cooked rice
  • 1 cup Shredded cheese (mozzarella or cheddar)
  • 1 cup Tomato sauce
  • 1 Onion (chopped)
  • 2 cloves Garlic (minced)
  • 2 tbsp Olive oil
  • Salt, pepper, and Italian seasoning to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly oil a baking dish.
  2. Slice the tops off peppers, remove seeds, and blanch in boiling water for 3–4 minutes.
  3. In a skillet, cook onion and garlic in olive oil, then add ground beef and cook until browned.
  4. Stir in cooked rice, tomato sauce, and seasonings; simmer for 5 minutes.
  5. Stuff each pepper with the filling and top generously with cheese.
  6. Bake 25–30 minutes until the peppers are tender and cheese is golden and bubbly.
  7. Garnish with fresh parsley and serve hot.

Notes

  • Feel free to use any color of bell pepper.
  • For a vegetarian option, substitute ground beef with black beans or lentils.
  • Adjust the seasoning according to your taste preferences.
