Classic Stuffed Bell Peppers are colorful bell peppers baked until tender and filled with savory beef, rice, tomato sauce, and melted cheese.

- 6 Bell peppers (red, yellow, or green)
- 1 lb Ground beef or turkey
- 1 cup Cooked rice
- 1 cup Shredded cheese (mozzarella or cheddar)
- 1 cup Tomato sauce
- 1 Onion (chopped)
- 2 cloves Garlic (minced)
- 2 tbsp Olive oil
- Salt, pepper, and Italian seasoning to taste
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly oil a baking dish.
- Slice the tops off peppers, remove seeds, and blanch in boiling water for 3–4 minutes.
- In a skillet, cook onion and garlic in olive oil, then add ground beef and cook until browned.
- Stir in cooked rice, tomato sauce, and seasonings; simmer for 5 minutes.
- Stuff each pepper with the filling and top generously with cheese.
- Bake 25–30 minutes until the peppers are tender and cheese is golden and bubbly.
- Garnish with fresh parsley and serve hot.
Notes
- Feel free to use any color of bell pepper.
- For a vegetarian option, substitute ground beef with black beans or lentils.
- Adjust the seasoning according to your taste preferences.
