Description

A hearty, cheesy casserole layered with seasoned beef, corn, and crispy tater tots—comfort food with a cowboy twist!


Ingredients

Scale
  • 1 lb ground beef
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • 1 cup frozen or canned corn
  • ½ cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat oven to 350°F and grease a 9×13” baking dish.
  2. In a skillet, brown ground beef with garlic powder, salt, and pepper; drain grease.
  3. Stir in cream of mushroom soup, sour cream, corn, and half the cheese.
  4. Spread mixture evenly into the baking dish.
  5. Arrange tater tots in a single layer on top.
  6. Bake uncovered for 35–40 minutes until golden and bubbly.
  7. Sprinkle remaining cheese and bake 5 more minutes. Garnish with green onions before serving.

Notes

  • For a spicier version, add diced jalapeños.
  • Can substitute ground turkey for a leaner option.
