Instructions

  1. Mix flour, oats, baking powder, and salt in one bowl to prepare the batter base.
  2. In another bowl, whisk together eggs, melted butter (or oil), sugar, orange juice, zest, and vanilla.
  3. Fold the wet ingredients into the dry ingredients just until mixed.
  4. Gently fold in cranberries (toss in a little flour first if using frozen).
  5. Pour the mixture into a greased loaf pan and bake at 350°F (175°C) for 50–60 minutes, until golden and a tester comes out clean.
  6. Let the loaf rest for 10 minutes, then remove from the pan.
