A delicious and creamy chicken salad inspired by the Chicken Salad Chick classic, featuring tender chicken, crunchy veggies, and a rich dressing.

- 2 cups cooked chicken breast (finely diced or shredded)
- 1 cup mayonnaise
- 1/2 cup celery (finely chopped)
- 1/4 cup red onion (small diced)
- 1/4 cup sour cream or a splash of heavy cream (optional for extra creaminess)
- 2 tablespoons lemon juice
- 1 teaspoon sugar (tiny pinch)
- Salt & pepper to taste
- 2 tablespoons parsley (chopped)
- Optional: 1/2 cup shredded carrots
Instructions
- In a large bowl, combine diced or shredded chicken with celery, red onion, and optional shredded carrots.
- Stir together mayonnaise, a splash of sour cream/heavy cream, lemon juice, salt, pepper, and a tiny pinch of sugar.
- Pour the dressing over the chicken mixture and fold gently until everything is fully coated.
- Add chopped parsley for freshness.
- Taste and adjust seasoning (more salt, lemon, or mayo).
- Chill 20–30 minutes for the flavors to meld.
- Serve with crackers, in wraps, or over greens.
Notes
- For a lighter version, use Greek yogurt instead of mayonnaise.
- Feel free to add other vegetables like bell peppers or cucumbers for extra crunch.
- This salad can be stored in the refrigerator for up to 3 days.
