A delicious and creamy chicken salad inspired by the Chicken Salad Chick classic, featuring tender chicken, crunchy veggies, and a rich dressing.


Ingredients

  • 2 cups cooked chicken breast (finely diced or shredded)
  • 1 cup mayonnaise
  • 1/2 cup celery (finely chopped)
  • 1/4 cup red onion (small diced)
  • 1/4 cup sour cream or a splash of heavy cream (optional for extra creaminess)
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar (tiny pinch)
  • Salt & pepper to taste
  • 2 tablespoons parsley (chopped)
  • Optional: 1/2 cup shredded carrots

Instructions

  1. In a large bowl, combine diced or shredded chicken with celery, red onion, and optional shredded carrots.
  2. Stir together mayonnaise, a splash of sour cream/heavy cream, lemon juice, salt, pepper, and a tiny pinch of sugar.
  3. Pour the dressing over the chicken mixture and fold gently until everything is fully coated.
  4. Add chopped parsley for freshness.
  5. Taste and adjust seasoning (more salt, lemon, or mayo).
  6. Chill 20–30 minutes for the flavors to meld.
  7. Serve with crackers, in wraps, or over greens.
