Ingredients
- Chicken breast (bite-size pieces)
- Penne pasta
- Sun-dried tomatoes (oil-packed, chopped)
- Parmesan cheese (freshly grated)
- Garlic, minced
- Heavy cream
- Chicken broth
- Olive oil or butter
- Red pepper flakes
- Italian seasoning
- Fresh spinach
- Salt & black pepper
- Fresh parsley or basil (optional)
Instructions
- Cook pasta in salted water until al dente; reserve ½ cup pasta water.
- Season chicken with salt, pepper, and Italian seasoning.
- Sauté chicken in olive oil until golden and cooked through; remove and set aside.
- In the same pan, sauté garlic and red pepper flakes until fragrant.
- Stir in sun-dried tomatoes, cream, broth, and Parmesan; simmer until silky.
- Add spinach and cooked chicken; stir until spinach wilts.
- Toss in pasta, loosening with pasta water if needed; finish with herbs and serve.

- For a spicier dish, increase the amount of red pepper flakes.
