Ingredients

- 2 cups all-purpose flour
- 1 cup whole milk
- 3 egg yolks
- ½ cup granulated sugar (plus extra for brûlée topping)
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 2 teaspoons instant yeast
- ½ teaspoon salt
- Oil for frying
- 1 tablespoon cornstarch
Instructions
- Warm milk slightly and mix with yeast and a teaspoon of sugar. Let foam 5–10 minutes.
- Combine flour, remaining sugar, and salt. Add egg yolks, melted butter, vanilla, and yeast mixture. Knead until smooth and elastic.
- Cover and let rise 1 hour or until doubled.
- Roll dough into small balls and rest 15 minutes. Fry at 350°F until deep golden brown, about 2–3 minutes per side. Drain.
- For custard, whisk egg yolks, sugar, and cornstarch. Heat milk until steaming, temper into yolks, then cook until thick and silky. Stir in vanilla and cool.
- Pipe custard into each donut bite. Sprinkle tops with sugar and torch until caramelized and glossy. Let set before serving.
