Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole milk
  • 3 egg yolks
  • ½ cup granulated sugar (plus extra for brûlée topping)
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 teaspoons instant yeast
  • ½ teaspoon salt
  • Oil for frying
  • 1 tablespoon cornstarch

Instructions

  1. Warm milk slightly and mix with yeast and a teaspoon of sugar. Let foam 5–10 minutes.
  2. Combine flour, remaining sugar, and salt. Add egg yolks, melted butter, vanilla, and yeast mixture. Knead until smooth and elastic.
  3. Cover and let rise 1 hour or until doubled.
  4. Roll dough into small balls and rest 15 minutes. Fry at 350°F until deep golden brown, about 2–3 minutes per side. Drain.
  5. For custard, whisk egg yolks, sugar, and cornstarch. Heat milk until steaming, temper into yolks, then cook until thick and silky. Stir in vanilla and cool.
  6. Pipe custard into each donut bite. Sprinkle tops with sugar and torch until caramelized and glossy. Let set before serving.
