Ingredients

- 8 slices Bacon
- 4 Eggs
- 2 cups Potatoes (diced)
- 4 large Flour tortillas
- 1 cup Shredded cheddar or pepper jack
- 2 tablespoons Butter or oil
- Salt & pepper to taste
- Chives or green onions for garnish
Instructions
- Cook bacon until crisp; chop and set aside, leaving a little bacon fat in the pan.
- Sauté diced potatoes in the bacon fat until golden and tender; season with salt and pepper.
- Scramble eggs in butter until soft and fluffy.
- Layer potatoes, eggs, bacon, and cheese onto each tortilla.
- Roll tightly into burritos, folding in sides to seal.
- Griddle seam-side down on medium-high heat until the tortilla is crispy and browned on all sides.
- Slice in half, sprinkle with chives, and serve hot.
Notes
- For extra flavor, add spices or hot sauce to the eggs.
- Feel free to substitute bacon with turkey bacon for a lighter option.
- Can be made ahead and reheated for a quick breakfast.
