Description

A golden-griddled breakfast burrito stuffed with smoky bacon, fluffy eggs, and crispy potatoes.


Ingredients

Scale
  • 8 slices Bacon
  • 4 Eggs
  • 2 cups Potatoes (diced)
  • 4 large Flour tortillas
  • 1 cup Shredded cheddar or pepper jack
  • 2 tablespoons Butter or oil
  • Salt & pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Cook bacon until crisp; chop and set aside, leaving a little bacon fat in the pan.
  2. Sauté diced potatoes in the bacon fat until golden and tender; season with salt and pepper.
  3. Scramble eggs in butter until soft and fluffy.
  4. Layer potatoes, eggs, bacon, and cheese onto each tortilla.
  5. Roll tightly into burritos, folding in sides to seal.
  6. Griddle seam-side down on medium-high heat until the tortilla is crispy and browned on all sides.
  7. Slice in half, sprinkle with chives, and serve hot.

Notes

  • For extra flavor, add spices or hot sauce to the eggs.
  • Feel free to substitute bacon with turkey bacon for a lighter option.
