Ingredients

  • 1 lb Brussels sprouts
  • 1/4 cup Pure maple syrup
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Garlic powder
  • Red pepper flakes (optional)
  • Fresh parsley or thyme (for garnish)
  • Lemon zest (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Halve Brussels sprouts and cut carrots into thick sticks.
  3. Toss vegetables with olive oil, salt, pepper, and garlic powder in a large bowl.
  4. Spread the vegetables evenly on the baking sheet, cut-side down for the Brussels sprouts.
  5. Roast in the oven for 20 minutes until browning and crisp edges form.
  6. Drizzle maple syrup over the veggies and toss gently to coat.
  7. Return to the oven for an additional 10–15 minutes until glossy, caramelized, and crispy.
  8. Finish with fresh herbs and lemon zest if desired before serving.
