Ingredients

- 1½ lbs sirloin steak, cut into chunks
- 2 lbs baby potatoes, halved
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1 medium onion, diced
- 2 cloves garlic, minced
- ½ cup beef broth
- 1 tbsp olive oil
- Salt, pepper, and paprika to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet and sear steak chunks until browned on all sides (don’t fully cook).
- Layer half the potatoes in the crockpot, followed by half the steak, onions, garlic, and seasonings.
- Repeat layers and pour beef broth evenly over the top.
- Cover and cook on Low for 6 hrs or High for 3½ hrs until potatoes are fork-tender.
- Sprinkle shredded cheese and bacon over top; cover for 5–10 minutes until melted.
- Garnish with chopped parsley and serve warm.
- Optional: add a dollop of sour cream for extra richness.
Notes
- For a spicier version, add diced jalapeños.
- Can substitute sirloin with other cuts of beef if desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
