Instructions
- Preheat oven to 350°F and line baking sheets with parchment.
- Beat butter, brown sugar, and granulated sugar until fluffy; add egg, yolk, and vanilla.
- Mix in flour until dough forms; fold in chocolate chips.
- In a small bowl, mix cream cheese and powdered sugar until smooth.
- Scoop cookie dough balls, flatten slightly, place a small spoon of cheesecake filling in the center, and cover with more dough.
- Bake 12–14 minutes until golden at edges but soft in the middle.
- Cool slightly before enjoying the gooey cheesecake center.
