Description

Juicy baked chicken over fluffy lemony rice, finished with cool, herby tzatziki—Greek comfort with zero effort.


Ingredients

Scale
  • 4 Chicken breasts or thighs
  • 1 cup Greek yogurt
  • 1 cup Rice
  • 2 cups Chicken broth
  • 1 Cucumber
  • 2 tbsp Fresh dill
  • 2 cloves Garlic
  • 2 tbsp Lemon juice
  • Salt & black pepper to taste
  • Olive oil (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a large baking dish.
  2. Spread uncooked rice evenly in the dish and pour chicken broth over it.
  3. Season chicken with salt and pepper and place directly on top of the rice.
  4. Cover tightly with foil and bake until rice is tender and chicken is cooked through, about 45 minutes.
  5. Meanwhile, grate cucumber and squeeze out excess moisture.
  6. Mix cucumber with Greek yogurt, garlic, lemon juice, dill, salt, and pepper to make tzatziki.
  7. Spoon tzatziki generously over baked chicken and rice just before serving.

Notes

  • For extra flavor, marinate the chicken in olive oil, lemon juice, and herbs before baking.
  • Feel free to add vegetables like bell peppers or spinach for added nutrition.
