- 4 Chicken breasts or thighs
- 1 cup Greek yogurt
- 1 cup Rice
- 2 cups Chicken broth
- 1 Cucumber
- 2 tbsp Fresh dill
- 2 cloves Garlic
- 2 tbsp Lemon juice
- Salt & black pepper to taste
- Olive oil (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a large baking dish.
- Spread uncooked rice evenly in the dish and pour chicken broth over it.
- Season chicken with salt and pepper and place directly on top of the rice.
- Cover tightly with foil and bake until rice is tender and chicken is cooked through, about 45 minutes.
- Meanwhile, grate cucumber and squeeze out excess moisture.
- Mix cucumber with Greek yogurt, garlic, lemon juice, dill, salt, and pepper to make tzatziki.
- Spoon tzatziki generously over baked chicken and rice just before serving.

- For extra flavor, marinate the chicken in olive oil, lemon juice, and herbs before baking.
