Ingredients

  • 2 lbs bone-in chicken pieces
  • 2 tbsp Jamaican curry powder
  • 2 medium potatoes, diced
  • 2 carrots, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup coconut milk
  • 1 ½ cups chicken broth
  • 2 tbsp vegetable oil
  • 1 Scotch bonnet or hot pepper (optional)
  • Salt and thyme to taste

Instructions

  1. Season chicken with 1 tbsp curry powder, salt, and thyme; let marinate for 15 minutes.
  2. Heat oil in a large pot, then brown chicken pieces on all sides. Remove and set aside.
  3. In the same pot, add onions, garlic, and remaining curry powder; sauté until fragrant.
  4. Stir in coconut milk, broth, potatoes, carrots, and Scotch bonnet.
  5. Return chicken to the pot, cover, and simmer for 30–35 minutes until chicken is tender and sauce thickens.
  6. Adjust seasoning to taste and simmer uncovered for 5 more minutes.
  7. Serve hot with steamed white rice or rice and peas.

Notes

  • For a spicier dish, include the Scotch bonnet pepper.
  • Adjust the amount of curry powder based on your taste preference.
