- 2 lbs bone-in chicken pieces
- 2 tbsp Jamaican curry powder
- 2 medium potatoes, diced
- 2 carrots, sliced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup coconut milk
- 1 ½ cups chicken broth
- 2 tbsp vegetable oil
- 1 Scotch bonnet or hot pepper (optional)
- Salt and thyme to taste
Instructions
- Season chicken with 1 tbsp curry powder, salt, and thyme; let marinate for 15 minutes.
- Heat oil in a large pot, then brown chicken pieces on all sides. Remove and set aside.
- In the same pot, add onions, garlic, and remaining curry powder; sauté until fragrant.
- Stir in coconut milk, broth, potatoes, carrots, and Scotch bonnet.
- Return chicken to the pot, cover, and simmer for 30–35 minutes until chicken is tender and sauce thickens.
- Adjust seasoning to taste and simmer uncovered for 5 more minutes.
- Serve hot with steamed white rice or rice and peas.
Notes
- For a spicier dish, include the Scotch bonnet pepper.
- Adjust the amount of curry powder based on your taste preference.
- Serve with a side of fresh salad for a complete meal.
