A golden, juicy whole chicken drenched in aromatic garlic-herb butter.
Ingredients
- Whole chicken (3.5–4.5 lbs)
- Butter (softened)
- Fresh garlic
- Fresh herbs (rosemary, thyme, parsley)
- Olive oil
- Lemon
- Salt & black pepper
- Onion (optional for roasting bed)
- Chicken broth (optional for pan juices)
Instructions
- Pat chicken dry and loosen the skin gently with your fingers.
- Mix softened butter with minced garlic, chopped herbs, lemon zest, salt, and pepper.
- Rub garlic-herb butter under the skin, over the skin, and inside the cavity.
- Stuff cavity with lemon halves and herbs; tie legs if desired.
- Roast at 425°F for 1 hr–1 hr 20 min, basting with melted butter halfway.
- Let rest 10–15 minutes before carving.
- Pour pan drippings over sliced chicken or whisk with broth for a quick sauce.
Notes
- Ensure the chicken is at room temperature before cooking for even roasting.
- Use a meat thermometer to check for doneness; the internal temperature should reach 165°F (75°C).
- Feel free to experiment with different herbs based on your preference.
