Description

A golden, juicy whole chicken drenched in aromatic garlic-herb butter.


Ingredients

  • Whole chicken (3.5–4.5 lbs)
  • Butter (softened)
  • Fresh garlic
  • Fresh herbs (rosemary, thyme, parsley)
  • Olive oil
  • Lemon
  • Salt & black pepper
  • Onion (optional for roasting bed)
  • Chicken broth (optional for pan juices)

Instructions

  1. Pat chicken dry and loosen the skin gently with your fingers.
  2. Mix softened butter with minced garlic, chopped herbs, lemon zest, salt, and pepper.
  3. Rub garlic-herb butter under the skin, over the skin, and inside the cavity.
  4. Stuff cavity with lemon halves and herbs; tie legs if desired.
  5. Roast at 425°F for 1 hr–1 hr 20 min, basting with melted butter halfway.
  6. Let rest 10–15 minutes before carving.
  7. Pour pan drippings over sliced chicken or whisk with broth for a quick sauce.

  • Ensure the chicken is at room temperature before cooking for even roasting.
  • Use a meat thermometer to check for doneness; the internal temperature should reach 165°F (75°C).
