Description

A beautifully roasted whole chicken brushed with garlic herb butter for ultra-crispy skin and juicy, flavorful meat.


Ingredients

  • Whole chicken
  • Butter (softened)
  • Fresh garlic (minced)
  • Fresh rosemary & parsley
  • Lemon (zest + wedges)
  • Olive oil
  • White wine or broth
  • Salt & pepper
  • Optional: thyme, paprika

Instructions

  1. Pat chicken dry thoroughly, then season the cavity with salt, pepper, and a few lemon wedges.
  2. Mix softened butter with garlic, rosemary, parsley, lemon zest, and a splash of olive oil.
  3. Gently loosen skin over the breasts and rub herb butter under the skin and all over the outside.
  4. Place chicken in a roasting dish; pour a splash of white wine (or broth) into the bottom.
  5. Roast at 425°F for 20 minutes, then reduce heat to 375°F and roast 45–55 minutes until golden with crispy skin.
  6. Baste once or twice with pan juices for extra crispiness.
  7. Rest chicken 10–15 minutes before carving and serving with the aromatic pan juices.

Notes

  • For extra flavor, consider adding thyme and paprika to the herb butter.
  • Ensure the chicken is at room temperature before roasting for even cooking.
