A beautifully roasted whole chicken brushed with garlic herb butter for ultra-crispy skin and juicy, flavorful meat.
Ingredients
- Whole chicken
- Butter (softened)
- Fresh garlic (minced)
- Fresh rosemary & parsley
- Lemon (zest + wedges)
- Olive oil
- White wine or broth
- Salt & pepper
- Optional: thyme, paprika
Instructions
- Pat chicken dry thoroughly, then season the cavity with salt, pepper, and a few lemon wedges.
- Mix softened butter with garlic, rosemary, parsley, lemon zest, and a splash of olive oil.
- Gently loosen skin over the breasts and rub herb butter under the skin and all over the outside.
- Place chicken in a roasting dish; pour a splash of white wine (or broth) into the bottom.
- Roast at 425°F for 20 minutes, then reduce heat to 375°F and roast 45–55 minutes until golden with crispy skin.
- Baste once or twice with pan juices for extra crispiness.
- Rest chicken 10–15 minutes before carving and serving with the aromatic pan juices.
Notes
- For extra flavor, consider adding thyme and paprika to the herb butter.
- Ensure the chicken is at room temperature before roasting for even cooking.
