Ingredients

- 2 medium Zucchini (sliced into rounds)
- 8 oz Cremini mushrooms (sliced)
- 1 Yellow onion (thinly sliced)
- 4 cloves Fresh garlic (minced)
- 2 tbsp Olive oil
- 2 tbsp Butter
- Salt (to taste)
- Black pepper (to taste)
- Red pepper flakes (to taste)
- 1 tsp Fresh thyme or Italian seasoning
- 2 tbsp Fresh parsley (chopped)
- Splash of lemon juice (optional)
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add onions and cook 2–3 minutes until slightly softened.
- Stir in mushrooms and cook until browned and moisture evaporates.
- Add zucchini slices in a single layer; season with salt, pepper, red pepper flakes, and thyme.
- Sauté 4–5 minutes until zucchini is tender but still slightly firm and lightly golden.
- Stir in minced garlic during the last minute of cooking. Finish with fresh parsley and a small squeeze of lemon juice before serving.
Notes
- Adjust seasoning according to taste.
- For a spicier dish, increase the amount of red pepper flakes.
- Can be served as a side dish or over pasta for a main course.
