Description

A buttery, savory skillet medley bursting with caramelized flavor and fresh herbs.


Ingredients

  • 2 medium Zucchini (sliced into rounds)
  • 8 oz Cremini mushrooms (sliced)
  • 1 Yellow onion (thinly sliced)
  • 4 cloves Fresh garlic (minced)
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • Salt (to taste)
  • Black pepper (to taste)
  • Red pepper flakes (to taste)
  • 1 tsp Fresh thyme or Italian seasoning
  • 2 tbsp Fresh parsley (chopped)
  • Splash of lemon juice (optional)

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add onions and cook 2–3 minutes until slightly softened.
  3. Stir in mushrooms and cook until browned and moisture evaporates.
  4. Add zucchini slices in a single layer; season with salt, pepper, red pepper flakes, and thyme.
  5. Sauté 4–5 minutes until zucchini is tender but still slightly firm and lightly golden.
  6. Stir in minced garlic during the last minute of cooking. Finish with fresh parsley and a small squeeze of lemon juice before serving.

  • Adjust seasoning according to taste.
  • For a spicier dish, increase the amount of red pepper flakes.
