Description

Golden Creamy Chicken Wellington is a delicious dish featuring flaky puff pastry wrapped around juicy herb chicken with a silky cream sauce center.

Ingredients

Scale
  • 4 Boneless skinless chicken breasts
  • 2 Puff pastry sheets
  • 8 oz Cream cheese
  • Fresh herbs (parsley + thyme)
  • 2 cloves Garlic (minced)
  • 2 tbsp Butter
  • 1/2 cup Heavy cream
  • 1 tbsp Dijon mustard
  • Salt & black pepper to taste
  • 1 Egg (for egg wash)
  • 1 tbsp Olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper. Sear in olive oil until lightly golden (not fully cooked). Let cool.
  3. In a bowl, mix softened cream cheese, minced garlic, chopped parsley, thyme, Dijon, and a splash of heavy cream until smooth.
  4. Roll out puff pastry and spread a layer of the herb cream mixture in the center. Place the seared chicken on top and spoon a little extra cream mixture over it.
  5. Fold pastry tightly around the chicken, sealing edges well. Place seam-side down on a lined baking sheet.
  6. Brush with egg wash for a glossy finish.
  7. Bake for 25–30 minutes until deep golden brown and puffed. Rest for 5–10 minutes before slicing.
  8. Warm remaining cream with a little butter to create a light sauce and spoon over slices before serving.

Notes

  • Ensure the chicken is not fully cooked when searing to prevent dryness.
  • Feel free to customize the herbs based on your preference.
  • Let the Wellington rest before slicing for cleaner cuts.
