Description

Delicious individual focaccia-style muffins with a crisp, glossy top and a fluffy, olive-oil-rich center, perfect for sharing.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 1 1/4 cups warm water
  • 1 tablespoon sugar or honey
  • 1 teaspoon salt
  • 3 cloves garlic, finely minced
  • 2 tablespoons butter, melted
  • Flaky sea salt, for sprinkling
  • Dried oregano or thyme (optional)

Instructions

  1. Dissolve yeast and sugar in warm water; let foam for 5 minutes.
  2. Mix flour, salt, olive oil, and yeast mixture into a sticky dough.
  3. Cover and let rise for 30 minutes until puffy.
  4. Grease a muffin tin generously with olive oil.
  5. Divide dough into muffin wells and dimple tops with oiled fingers.
  6. Brush with melted garlic butter; sprinkle rosemary and sea salt on top.
  7. Bake for 18–22 minutes until deeply golden and crisp on top.

Notes

  • For extra flavor, add dried oregano or thyme to the dough.
  • Ensure the water is warm but not hot to avoid killing the yeast.
  • These muffins are best served warm.
