Ingredients

- 3 cups all-purpose flour
- 2 1/4 teaspoons active dry yeast
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary, chopped
- 1 1/4 cups warm water
- 1 tablespoon sugar or honey
- 1 teaspoon salt
- 3 cloves garlic, finely minced
- 2 tablespoons butter, melted
- Flaky sea salt, for sprinkling
- Dried oregano or thyme (optional)
Instructions
- Dissolve yeast and sugar in warm water; let foam for 5 minutes.
- Mix flour, salt, olive oil, and yeast mixture into a sticky dough.
- Cover and let rise for 30 minutes until puffy.
- Grease a muffin tin generously with olive oil.
- Divide dough into muffin wells and dimple tops with oiled fingers.
- Brush with melted garlic butter; sprinkle rosemary and sea salt on top.
- Bake for 18–22 minutes until deeply golden and crisp on top.
Notes
- For extra flavor, add dried oregano or thyme to the dough.
- Ensure the water is warm but not hot to avoid killing the yeast.
- These muffins are best served warm.
