Instructions

  1. Sauté onion in olive oil or butter until soft and translucent.
  2. Add whole or lightly crushed garlic cloves and cook gently until fragrant (do not brown).
  3. Add diced potatoes, bay leaf, salt, and vegetable broth.
  4. Simmer until potatoes are very tender and broth is flavorful.
  5. Lightly mash or partially blend for a rustic, chunky texture.
  6. Season generously with black pepper and adjust salt.
