Instructions
- Sauté onion in olive oil or butter until soft and translucent.
- Add whole or lightly crushed garlic cloves and cook gently until fragrant (do not brown).
- Add diced potatoes, bay leaf, salt, and vegetable broth.
- Simmer until potatoes are very tender and broth is flavorful.
- Lightly mash or partially blend for a rustic, chunky texture.
- Season generously with black pepper and adjust salt.
- Finish with fresh parsley and a drizzle of olive oil before serving.

- For a spicier kick, add optional chili flakes.
