- 8 oz whipped topping (folded in)
- 1 cup pineapple chunks
- 1 cup strawberries (sliced)
- 1 kiwi (sliced)
- 1 cup cherries or raspberries
- 1/2 cup shredded coconut
- 1–2 tbsp sugar or honey (optional for sweetness)
- 1 tsp vanilla extract
Instructions
- Beat softened cream cheese until smooth; mix in a splash of vanilla and a little sugar/honey if desired.
- Fold in whipped topping gently to create a fluffy cheesecake base.
- Add pineapple, strawberries, kiwi, and cherries; fold carefully to avoid crushing the fruit.
- Sprinkle in shredded coconut for tropical texture.
- Chill for at least 1 hour to let flavors blend and cream set.
- Stir lightly before serving to redistribute fruit.
- Top with extra fruit and coconut just before serving for a fresh look.
