Description

A tropical, creamy, no-bake fruit salad loaded with juicy pineapple, strawberries, kiwi, cherries, and coconut.

Ingredients

Scale
  • 8 oz cream cheese (softened)
  • 8 oz whipped topping (folded in)
  • 1 cup pineapple chunks
  • 1 cup strawberries (sliced)
  • 1 kiwi (sliced)
  • 1 cup cherries or raspberries
  • 1/2 cup shredded coconut
  • 12 tbsp sugar or honey (optional for sweetness)
  • 1 tsp vanilla extract

Instructions

  1. Beat softened cream cheese until smooth; mix in a splash of vanilla and a little sugar/honey if desired.
  2. Fold in whipped topping gently to create a fluffy cheesecake base.
  3. Add pineapple, strawberries, kiwi, and cherries; fold carefully to avoid crushing the fruit.
  4. Sprinkle in shredded coconut for tropical texture.
  5. Chill for at least 1 hour to let flavors blend and cream set.
  6. Stir lightly before serving to redistribute fruit.
  7. Top with extra fruit and coconut just before serving for a fresh look.
