Description

A bold, soul-warming soup packed with smoky sausage, tender peas, and earthy greens.


Ingredients

  • Black-eyed peas (cooked or canned)
  • Andouille sausage
  • Kale
  • Chicken broth
  • Onion (chopped)
  • Bell pepper (diced)
  • Garlic (minced)
  • Olive oil
  • Smoked paprika
  • Thyme
  • Bay leaf
  • Salt & black pepper
  • Red pepper flakes (optional)

Instructions

  1. Slice and brown sausage in a large pot with olive oil; remove and set aside.
  2. In the same pot, sauté onion and bell pepper until soft.
  3. Add garlic, smoked paprika, thyme, and bay leaf; stir until fragrant.
  4. Add black-eyed peas and chicken broth; bring to a gentle simmer.
  5. Stir in kale and browned sausage.
  6. Simmer 20–25 minutes until flavors meld and kale is tender.
  7. Season to taste and serve hot.

Notes

  • For a spicier soup, add more red pepper flakes.
  • Can substitute turkey sausage for a lighter option.
