Ingredients
- Black-eyed peas (cooked or canned)
- Andouille sausage
- Kale
- Chicken broth
- Onion (chopped)
- Bell pepper (diced)
- Garlic (minced)
- Olive oil
- Smoked paprika
- Thyme
- Bay leaf
- Salt & black pepper
- Red pepper flakes (optional)
Instructions
- Slice and brown sausage in a large pot with olive oil; remove and set aside.
- In the same pot, sauté onion and bell pepper until soft.
- Add garlic, smoked paprika, thyme, and bay leaf; stir until fragrant.
- Add black-eyed peas and chicken broth; bring to a gentle simmer.
- Stir in kale and browned sausage.
- Simmer 20–25 minutes until flavors meld and kale is tender.
- Season to taste and serve hot.
Notes
- For a spicier soup, add more red pepper flakes.
- Can substitute turkey sausage for a lighter option.
- Leftovers can be stored in the refrigerator for up to 3 days.
