Homemade Copycat Nutter Butter Cookies are soft peanut butter sandwich cookies with a creamy filling, better than the original.

- 1 cup creamy peanut butter
- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter, peanut butter, granulated sugar, and brown sugar until fluffy.
- Beat in egg and vanilla until smooth.
- Mix in flour, baking soda, and salt until a soft dough forms.
- Roll dough into small balls, flatten slightly, and press fork marks on top.
- Bake for 12–15 minutes until edges are lightly golden; cool completely.
- Mix peanut butter and powdered sugar for filling, sandwich between cookies, and serve.

- Ensure the butter is softened for easier mixing.
- For a richer flavor, use natural peanut butter.
- Store cookies in an airtight container to maintain freshness.
