Description

Homemade Copycat Nutter Butter Cookies are soft peanut butter sandwich cookies with a creamy filling, better than the original.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in egg and vanilla until smooth.
  4. Mix in flour, baking soda, and salt until a soft dough forms.
  5. Roll dough into small balls, flatten slightly, and press fork marks on top.
  6. Bake for 12–15 minutes until edges are lightly golden; cool completely.
  7. Mix peanut butter and powdered sugar for filling, sandwich between cookies, and serve.
