- 1 lb Ground beef (or beef–lamb mix)
- 1 Egg
- 1/4 cup Fresh parsley, chopped
- 3 cloves Garlic, minced
- 1/4 cup Almond flour
- 1 Onion, very finely grated
- 1 tsp Dried oregano
- 2 tbsp Fresh dill or mint (optional but classic)
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper
- Zest of 1 Lemon (optional)
- Tzatziki (for serving, optional)
Instructions
- Preheat oven to 400°F (205°C) and line a baking sheet with parchment (or heat olive oil in a skillet).
- In a bowl, combine ground meat, egg, almond flour, garlic, onion, herbs, salt, pepper, and lemon zest.
- Mix gently until just combined—do not overwork.
- Roll into golf-ball–size meatballs.
- Arrange on baking sheet and brush lightly with olive oil.
- Bake for 20–25 minutes, turning once, until browned and cooked through (or pan-fry until golden).
- Serve warm with tzatziki or a fresh Greek salad.
Notes
- For extra flavor, consider adding more herbs or spices to the meat mixture.
- These meatballs can be frozen before cooking for a quick meal later.
