Ingredients

  • 1 lb Ground beef (or beef–lamb mix)
  • 1 Egg
  • 1/4 cup Fresh parsley, chopped
  • 3 cloves Garlic, minced
  • 1/4 cup Almond flour
  • 1 Onion, very finely grated
  • 1 tsp Dried oregano
  • 2 tbsp Fresh dill or mint (optional but classic)
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • Zest of 1 Lemon (optional)
  • Tzatziki (for serving, optional)

Instructions

  1. Preheat oven to 400°F (205°C) and line a baking sheet with parchment (or heat olive oil in a skillet).
  2. In a bowl, combine ground meat, egg, almond flour, garlic, onion, herbs, salt, pepper, and lemon zest.
  3. Mix gently until just combined—do not overwork.
  4. Roll into golf-ball–size meatballs.
  5. Arrange on baking sheet and brush lightly with olive oil.
  6. Bake for 20–25 minutes, turning once, until browned and cooked through (or pan-fry until golden).
  7. Serve warm with tzatziki or a fresh Greek salad.
