Cheesy, bacon-topped baby potatoes perfect for snacking or parties.
Ingredients
- Baby potatoes
- Cheddar cheese, shredded
- Crispy bacon, chopped
- Sour cream
- Butter
- Salt & pepper
- Chives, finely chopped
- Paprika (optional)
Instructions
- Preheat oven to 400°F and line a tray with parchment.
- Boil baby potatoes for 10–12 minutes until just tender; drain and cool slightly.
- Slice a small “cap” off each potato, scoop a shallow well, and brush with melted butter, salt, and pepper.
- Bake 12 minutes to crisp the edges.
- Fill each with cheddar, bake another 5 minutes until melted.
- Top with warm chopped bacon, a tiny dollop of sour cream, and chives.
- Serve hot as a party appetizer or game-day snack.
Notes
- For extra flavor, add paprika to the potatoes before baking.
- These can be prepared ahead of time and baked just before serving.
