- 4 Boneless skinless chicken breasts
- 1 cup Feta cheese
- 2 cups Fresh spinach
- 1/2 cup Sun-dried tomatoes
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 teaspoon Italian seasoning
- 1 teaspoon Paprika
- Salt & black pepper to taste
- Toothpicks or kitchen twine
Instructions
- Butterfly chicken breasts and pound to even thickness.
- Sauté garlic and spinach in olive oil until wilted; cool slightly.
- Mix spinach with crumbled feta and chopped sun-dried tomatoes.
- Spread filling over chicken, roll tightly, and secure with toothpicks.
- Season outside with salt, pepper, paprika, and Italian seasoning.
- Sear in a hot skillet until golden, then transfer to oven and bake for 18–22 minutes until cooked through. Rest before slicing.
