Description

Juicy golden chicken breasts rolled around a creamy, savory Mediterranean filling.


Ingredients

Scale
  • 4 Boneless skinless chicken breasts
  • 1 cup Feta cheese
  • 2 cups Fresh spinach
  • 1/2 cup Sun-dried tomatoes
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Paprika
  • Salt & black pepper to taste
  • Toothpicks or kitchen twine

Instructions

  1. Butterfly chicken breasts and pound to even thickness.
  2. Sauté garlic and spinach in olive oil until wilted; cool slightly.
  3. Mix spinach with crumbled feta and chopped sun-dried tomatoes.
  4. Spread filling over chicken, roll tightly, and secure with toothpicks.
  5. Season outside with salt, pepper, paprika, and Italian seasoning.
  6. Sear in a hot skillet until golden, then transfer to oven and bake for 18–22 minutes until cooked through. Rest before slicing.
