Description

A bold, cheesy fusion of Mexican flavors layered lasagna-style with beef, beans, and zesty toppings.


Ingredients

  • 1 lb Ground beef
  • 8 Corn tortillas (or lasagna noodles)
  • 2 cups Cheddar and Monterey Jack cheese (shredded)
  • 2 cups Enchilada sauce
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 Onion (chopped)
  • 2 tbsp Taco seasoning
  • Sour cream for garnish
  • Diced tomatoes for garnish
  • Cilantro for garnish

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.
  2. In a skillet, cook beef and onion until browned; stir in taco seasoning, beans, corn, and enchilada sauce.
  3. Layer tortillas (or noodles) in the dish, followed by the beef mixture and cheese.
  4. Repeat layers, finishing with cheese on top.
  5. Bake uncovered for 25–30 minutes until bubbly and golden.
  6. Let rest for 10 minutes to set before slicing.
  7. Top each serving with sour cream, diced tomatoes, and fresh cilantro.
