- 1 lb Ground beef
- 8 Corn tortillas (or lasagna noodles)
- 2 cups Cheddar and Monterey Jack cheese (shredded)
- 2 cups Enchilada sauce
- 1 can Black beans
- 1 cup Corn kernels
- 1 Onion (chopped)
- 2 tbsp Taco seasoning
- Sour cream for garnish
- Diced tomatoes for garnish
- Cilantro for garnish
Instructions
- Preheat oven to 375°F and lightly grease a baking dish.
- In a skillet, cook beef and onion until browned; stir in taco seasoning, beans, corn, and enchilada sauce.
- Layer tortillas (or noodles) in the dish, followed by the beef mixture and cheese.
- Repeat layers, finishing with cheese on top.
- Bake uncovered for 25–30 minutes until bubbly and golden.
- Let rest for 10 minutes to set before slicing.
- Top each serving with sour cream, diced tomatoes, and fresh cilantro.

- For a vegetarian option, substitute ground beef with lentils or mushrooms.
