- ¼ cup mini chocolate chips
- 2 tbsp almond butter
- 2 tbsp honey or maple syrup
- 1 tsp peppermint extract
- 1–2 tbsp almond milk (to bind)
- ½ cup melted white chocolate + green food coloring (for coating)
Instructions
- In a bowl, mix protein powder, almond flour, and mini chocolate chips.
- Stir in almond butter, honey, peppermint extract, and almond milk until a dough forms.
- Roll mixture into small balls and chill for 10 minutes.
- Melt white chocolate, tint with a drop of green food coloring, and dip each ball until coated.
- Sprinkle extra mini chocolate chips on top before the coating sets.
- Chill for another 10–15 minutes until firm.
- Store in the fridge for a refreshing post-workout or guilt-free dessert.
