- ½ cup unsweetened cocoa powder
- ½ cup butter (softened)
- ½ cup sugar
- 1 large egg
- ½ tsp baking soda
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ cup heavy cream
- ½ cup dark chocolate chips
- 1 tsp instant coffee or espresso powder
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugar until fluffy; beat in egg and vanilla.
- Mix flour, cocoa powder, baking soda, and salt; combine with wet ingredients to form dough.

- Chill filling slightly, then spread or pipe between two cookies.

Notes
- Ensure the butter is softened for easier mixing.
- Chilling the ganache helps it set properly for spreading.
