Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugars until fluffy; beat in egg and vanilla.
  3. Add flour, oats, cinnamon, baking soda, and salt; mix until combined.
  4. Scoop small dough balls onto the sheet and flatten slightly; bake 10–12 minutes until golden.
  5. Cool completely before filling.
  6. For the cream: beat butter, powdered sugar, vanilla, and cream until smooth and fluffy.
  7. Spread or pipe filling onto one cookie, top with another, and gently press to sandwich.
