- 1 tbsp heavy cream
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Cream butter and sugars until fluffy; beat in egg and vanilla.
- Add flour, oats, cinnamon, baking soda, and salt; mix until combined.
- Scoop small dough balls onto the sheet and flatten slightly; bake 10–12 minutes until golden.
- Cool completely before filling.
- For the cream: beat butter, powdered sugar, vanilla, and cream until smooth and fluffy.
- Spread or pipe filling onto one cookie, top with another, and gently press to sandwich.
