Description

Tender beef in a rich, creamy mushroom sauce served over egg noodles—comfort food at its best, just like Grandma used to make.

Ingredients

Scale
  • 1 lb beef sirloin or stew meat, cubed
  • 1 small onion, diced
  • 1 cup mushrooms, sliced
  • 1 cup sour cream
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup beef broth
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Cooked egg noodles for serving
  • Fresh parsley for garnish

Instructions

  1. In a skillet, melt butter and sauté onions and mushrooms until soft. Remove and set aside.
  2. In the same skillet, brown beef cubes until seared on all sides.
  3. Sprinkle flour over the beef and stir to coat.
  4. Add beef broth and mustard, stirring until sauce thickens slightly.
  5. Return mushrooms and onions to the pan; simmer 10 minutes.
  6. Stir in sour cream and cook on low just until creamy and heated through (don’t boil).
  7. Serve over egg noodles, garnished with parsley.

Notes

  • For a richer flavor, use a combination of beef broth and red wine.
  • Feel free to add other vegetables like bell peppers or peas.
  • Leftovers can be stored in the refrigerator for up to 3 days.
