Ingredients

- 1 lb beef sirloin or stew meat, cubed
- 1 small onion, diced
- 1 cup mushrooms, sliced
- 1 cup sour cream
- 2 tbsp butter
- 1 tbsp flour
- 1 cup beef broth
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Cooked egg noodles for serving
- Fresh parsley for garnish
Instructions
- In a skillet, melt butter and sauté onions and mushrooms until soft. Remove and set aside.
- In the same skillet, brown beef cubes until seared on all sides.
- Sprinkle flour over the beef and stir to coat.
- Add beef broth and mustard, stirring until sauce thickens slightly.
- Return mushrooms and onions to the pan; simmer 10 minutes.
- Stir in sour cream and cook on low just until creamy and heated through (don’t boil).
- Serve over egg noodles, garnished with parsley.
Notes
- For a richer flavor, use a combination of beef broth and red wine.
- Feel free to add other vegetables like bell peppers or peas.
- Leftovers can be stored in the refrigerator for up to 3 days.
