Ingredients

  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup melted butter or oil
  • 1 tsp peppermint extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup heavy cream (for chocolate drizzle)
  • Crushed peppermint candies (for topping)

Instructions

  1. Whisk flour, cocoa powder, sugar, baking powder, and salt in a bowl.
  2. In another bowl, mix eggs, melted butter/oil, and a few drops of peppermint extract.
  3. Combine wet with dry ingredients and fold in chocolate chips.
  4. Scoop batter into a lined muffin pan.
  5. Bake at 375°F for 16–18 minutes until set.
  6. Drizzle with warm chocolate ganache made from cream + chocolate.
