- 8 oz Cavatappi pasta
- 1 cup Mayonnaise
- 1/2 cup Sour cream
- 1 Red bell pepper, diced
- 1 Carrot, finely diced
- 1/2 cup Celery, chopped
- 1/4 cup Red onion, finely diced
- 2 tbsp Dijon mustard
- 2 tbsp White vinegar
- 1 tbsp Sugar
- 1 tsp Kosher salt
- 1/2 tsp Black pepper
Instructions
- Cook cavatappi in salted water until just al dente; drain and cool completely.
- In a large bowl, whisk mayonnaise, sour cream, Dijon mustard, vinegar, sugar, salt, and pepper until smooth.
- Add carrot, celery, red bell pepper, and red onion to the dressing.
- Fold in cooled pasta until evenly coated and creamy.
- Taste and adjust seasoning for tang or sweetness.
- Chill for at least 20 minutes to let flavors meld.
- Stir once more before serving for best texture.
