- ¾ cup shelled pistachios, roughly chopped
- 1 cup pistachio cream or pistachio butter
- 2 cups pistachio-flavored white chocolate, melted
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
- ¼ cup finely chopped pistachios (for topping)
- Mini cupcake liners
Instructions
- Prepare brownies according to your favorite fudgy recipe and let cool completely. Crumble into fine crumbs.
- Mix brownie crumbs with heavy cream, vanilla, and salt until a thick dough forms. Fold in chopped pistachios.
- Scoop and flatten portions, add a small spoon of pistachio cream in the center, then roll into smooth balls. Chill 20–30 minutes.
- Dip each chilled ball into melted pistachio white chocolate, coating fully.
- Place in cupcake liners and immediately sprinkle tops with chopped pistachios.
- Chill again until coating is fully set and glossy. Serve slightly softened for a fudgy bite.
