Ingredients

  • ¾ cup shelled pistachios, roughly chopped
  • 1 cup pistachio cream or pistachio butter
  • 2 cups pistachio-flavored white chocolate, melted
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup finely chopped pistachios (for topping)
  • Mini cupcake liners

Instructions

  1. Prepare brownies according to your favorite fudgy recipe and let cool completely. Crumble into fine crumbs.
  2. Mix brownie crumbs with heavy cream, vanilla, and salt until a thick dough forms. Fold in chopped pistachios.
  3. Scoop and flatten portions, add a small spoon of pistachio cream in the center, then roll into smooth balls. Chill 20–30 minutes.
  4. Dip each chilled ball into melted pistachio white chocolate, coating fully.
