Description

A silky green pistachio mousse layered over rich chocolate ganache, topped with chopped pistachios and dark chocolate shards.


Ingredients

Scale
  • 1 cup pistachio paste
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup bittersweet chocolate
  • 1/2 cup warm cream (for ganache)
  • 2 tbsp butter (for ganache)
  • 1/4 cup chopped pistachios
  • 1/4 cup dark chocolate pieces
  • Pinch of salt

Instructions

  1. Make the ganache by melting bittersweet chocolate with warm cream and a little butter; divide into dessert glasses and chill to set.
  2. Whip cold cream with powdered sugar and vanilla until lightly thick.
  3. Fold in pistachio paste to create a smooth, pale green mousse.
  4. Pipe or spoon the pistachio mousse on top of the chilled ganache layer.
  5. Sprinkle chopped pistachios and dark chocolate shards over the mousse.
  6. Chill for 30 minutes for best texture.
  7. Serve cold and creamy.
