Ingredients

- 1 cup pistachio paste
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup bittersweet chocolate
- 1/2 cup warm cream (for ganache)
- 2 tbsp butter (for ganache)
- 1/4 cup chopped pistachios
- 1/4 cup dark chocolate pieces
- Pinch of salt
Instructions
- Make the ganache by melting bittersweet chocolate with warm cream and a little butter; divide into dessert glasses and chill to set.
- Whip cold cream with powdered sugar and vanilla until lightly thick.
- Fold in pistachio paste to create a smooth, pale green mousse.
- Pipe or spoon the pistachio mousse on top of the chilled ganache layer.
- Sprinkle chopped pistachios and dark chocolate shards over the mousse.
- Chill for 30 minutes for best texture.
- Serve cold and creamy.
