Ingredients

  • 2 1/2 cups All-purpose flour
  • 2 tsp Pumpkin spice blend
  • 1 cup Espresso or strong coffee
  • 1 1/2 cups Brown sugar
  • 4 Eggs
  • 1/2 cup Vegetable oil
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 cup Heavy cream
  • 8 oz Cream cheese
  • 2 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1 cup Caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and grease three round cake pans.
  2. Whisk together flour, pumpkin spice, baking powder, baking soda, and salt.
  3. In a separate bowl, beat eggs, brown sugar, oil, pumpkin purée, and espresso until smooth.
  4. Fold the dry ingredients into the wet batter and divide evenly between the prepared pans.
  5. Bake until set and cool completely.
  6. Whip together cream cheese, powdered sugar, vanilla, and espresso into a fluffy frosting.
  7. Layer the cake with frosting and finish with caramel sauce dripping over the top.
