Ingredients

- 2 Large flour tortillas
- 2 cups Fresh spinach
- 1/2 cup Feta cheese, crumbled
- 4 Eggs
- 1 tablespoon Olive oil or butter
- 1 clove Garlic (optional)
- Salt, to taste
- Black pepper, to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil in a skillet and sauté spinach (and garlic if using) until wilted.
- Lightly beat eggs with salt and pepper, then scramble gently in the pan.
- Stir wilted spinach into the eggs and remove from heat.
- Warm tortillas in a dry pan until lightly toasted and flexible.
- Spoon egg-spinach mixture down the center of each tortilla.
- Sprinkle generously with crumbled feta.
- Roll tightly into wraps and toast seam-side down until golden.

- Feel free to add other vegetables or proteins to customize your wrap.
- For a spicier kick, add more red pepper flakes.
