Description

Ingredients

  • 8 oz Smoked mozzarella
  • 12 oz Rigatoni pasta
  • 4 cups Baby spinach
  • 1 cup Roasted bell peppers
  • 1/2 cup Mayonnaise
  • 2 tbsp White wine vinegar
  • 2 Garlic cloves, minced
  • 1/4 cup Parmesan cheese, grated
  • 1 tsp Dried parsley
  • 1/4 tsp Cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Cook rigatoni in salted water until al dente; drain and cool slightly.
  2. Whisk mayonnaise, white wine vinegar, garlic, salt, pepper, and cayenne until smooth.
  3. Toss warm pasta with the dressing to help it absorb flavor.
  4. Fold in chopped smoked mozzarella and grated Parmesan.
  5. Add roasted bell peppers and fresh spinach, mixing gently.
  6. Sprinkle in dried parsley and adjust seasoning.
  7. Chill for 20–30 minutes before serving for best flavor.
