- 8 oz Smoked mozzarella
- 12 oz Rigatoni pasta
- 4 cups Baby spinach
- 1 cup Roasted bell peppers
- 1/2 cup Mayonnaise
- 2 tbsp White wine vinegar
- 2 Garlic cloves, minced
- 1/4 cup Parmesan cheese, grated
- 1 tsp Dried parsley
- 1/4 tsp Cayenne pepper
- Salt and black pepper to taste
Instructions
- Cook rigatoni in salted water until al dente; drain and cool slightly.
- Whisk mayonnaise, white wine vinegar, garlic, salt, pepper, and cayenne until smooth.
- Toss warm pasta with the dressing to help it absorb flavor.
- Fold in chopped smoked mozzarella and grated Parmesan.
- Add roasted bell peppers and fresh spinach, mixing gently.
- Sprinkle in dried parsley and adjust seasoning.
- Chill for 20–30 minutes before serving for best flavor.
