Description

Juicy, savory meatloaf baked in cupcake form and drenched in sticky bourbon BBQ sauce.


Ingredients

Scale
  • 1 lb Ground beef
  • 1/2 cup BBQ sauce
  • 1/2 cup Breadcrumbs
  • 1 Egg
  • 1 Onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1/4 cup Milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Bourbon (optional but recommended)
  • Mashed potatoes (for topping, optional)
  • Fresh parsley (garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire, smoked paprika, salt, and pepper.
  3. Stir bourbon into BBQ sauce and reserve half for glazing.
  4. Divide meat mixture evenly into muffin cups, pressing gently.
  5. Spoon BBQ-bourbon sauce over each cupcake.
  6. Bake 25–30 minutes until cooked through and caramelized.
  7. Top with a dollop of mashed potatoes and extra sauce if desired.

Notes

  • For a spicier kick, add cayenne pepper to the meat mixture.
  • Ensure the meatloaf is cooked through by checking the internal temperature reaches 160°F (71°C).
