Juicy, savory meatloaf baked in cupcake form and drenched in sticky bourbon BBQ sauce.

- 1 lb Ground beef
- 1/2 cup BBQ sauce
- 1/2 cup Breadcrumbs
- 1 Egg
- 1 Onion (finely diced)
- 2 cloves Garlic (minced)
- 1/4 cup Milk
- 1 tbsp Worcestershire sauce
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1/2 tsp Black pepper
- 2 tbsp Bourbon (optional but recommended)
- Mashed potatoes (for topping, optional)
- Fresh parsley (garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire, smoked paprika, salt, and pepper.
- Stir bourbon into BBQ sauce and reserve half for glazing.
- Divide meat mixture evenly into muffin cups, pressing gently.
- Spoon BBQ-bourbon sauce over each cupcake.
- Bake 25–30 minutes until cooked through and caramelized.
- Top with a dollop of mashed potatoes and extra sauce if desired.
Notes
- For a spicier kick, add cayenne pepper to the meat mixture.
- Ensure the meatloaf is cooked through by checking the internal temperature reaches 160°F (71°C).
- Leftovers can be stored in the refrigerator for up to 3 days.
