Description

Juicy beef meatloaf packed with jalapeños, bacon, and melty cheese, finished with a rich creamy sauce.


Ingredients

  • Ground beef (80/20)
  • Fresh jalapeños (sliced + diced)
  • Cream cheese (softened)
  • Bacon (cooked and crumbled)
  • Shredded cheddar cheese
  • Eggs
  • Breadcrumbs
  • Garlic powder
  • Smoked paprika
  • Salt & black pepper
  • Heavy cream (for drizzle)
  • Fresh parsley (optional garnish)

Instructions

  1. Preheat oven to 375°F and line a baking sheet or loaf pan with parchment.
  2. In a large bowl, mix ground beef, diced jalapeños, bacon, breadcrumbs, eggs, garlic powder, smoked paprika, salt, and pepper until just combined.
  3. Press half the meat mixture into a loaf shape, spread cream cheese and shredded cheddar in the center, then top with remaining meat mixture and seal edges.
  4. Arrange sliced jalapeños on top and lightly press them in.
  5. Bake 50–60 minutes until cooked through and nicely browned. Rest 10 minutes before slicing.
  6. Warm heavy cream with a pinch of salt and pepper until slightly thickened, then drizzle generously over sliced meatloaf.
  7. Garnish with chopped parsley and serve warm.

Notes

  • For a spicier version, leave some seeds in the jalapeños.
  • Let the meatloaf rest before slicing for better texture.
  • Can be served with a side of mashed potatoes or a fresh salad.
