Description
Juicy beef meatloaf packed with jalapeños, bacon, and melty cheese, finished with a rich creamy sauce.
Ingredients
- Ground beef (80/20)
- Fresh jalapeños (sliced + diced)
- Cream cheese (softened)
- Bacon (cooked and crumbled)
- Shredded cheddar cheese
- Eggs
- Breadcrumbs
- Garlic powder
- Smoked paprika
- Salt & black pepper
- Heavy cream (for drizzle)
- Fresh parsley (optional garnish)
Instructions
- Preheat oven to 375°F and line a baking sheet or loaf pan with parchment.
- In a large bowl, mix ground beef, diced jalapeños, bacon, breadcrumbs, eggs, garlic powder, smoked paprika, salt, and pepper until just combined.
- Press half the meat mixture into a loaf shape, spread cream cheese and shredded cheddar in the center, then top with remaining meat mixture and seal edges.
- Arrange sliced jalapeños on top and lightly press them in.
- Bake 50–60 minutes until cooked through and nicely browned. Rest 10 minutes before slicing.
- Warm heavy cream with a pinch of salt and pepper until slightly thickened, then drizzle generously over sliced meatloaf.
- Garnish with chopped parsley and serve warm.
Notes
- For a spicier version, leave some seeds in the jalapeños.
- Let the meatloaf rest before slicing for better texture.
- Can be served with a side of mashed potatoes or a fresh salad.
