- 2 chicken breasts, sliced or whole for searing
- 2 tbsp Cajun seasoning
- 300 g rigatoni
- 1 cup heavy cream
- 1 tbsp butter
- 1 tbsp olive oil
- 1 cup diced tomatoes or cherry tomatoes
- ½ cup chicken broth
- 2 cloves garlic, minced
- ½ cup Parmesan cheese
- Parsley for garnish
- Salt & pepper to taste
Instructions
- Season chicken generously with Cajun seasoning; sear 4–5 minutes per side until golden. Remove and slice.
- Cook rigatoni until al dente; reserve ½ cup pasta water.
- In the same pan, melt butter, add garlic and tomatoes, and sauté until softened.
- Pour in cream and broth; simmer for 3 minutes. Add Parmesan and stir to melt into a creamy Cajun sauce.
- Add cooked pasta and toss, thinning with pasta water if needed for extra creaminess.
- Top with sliced Cajun chicken and spoon a little sauce over.
- Finish with fresh parsley and serve hot.
Notes
- Adjust the amount of Cajun seasoning to taste for desired spiciness.
- For a lighter version, substitute heavy cream with half-and-half.
- Can add vegetables like bell peppers or spinach for extra nutrition.
