Description

A flavorful dish featuring seared chicken, bold Cajun spices, and a creamy sauce enveloping tender rigatoni pasta.


Ingredients

  • 2 chicken breasts, sliced or whole for searing
  • 2 tbsp Cajun seasoning
  • 300 g rigatoni
  • 1 cup heavy cream
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 cup diced tomatoes or cherry tomatoes
  • ½ cup chicken broth
  • 2 cloves garlic, minced
  • ½ cup Parmesan cheese
  • Parsley for garnish
  • Salt & pepper to taste

Instructions

  1. Season chicken generously with Cajun seasoning; sear 4–5 minutes per side until golden. Remove and slice.
  2. Cook rigatoni until al dente; reserve ½ cup pasta water.
  3. In the same pan, melt butter, add garlic and tomatoes, and sauté until softened.
  4. Pour in cream and broth; simmer for 3 minutes. Add Parmesan and stir to melt into a creamy Cajun sauce.
  5. Add cooked pasta and toss, thinning with pasta water if needed for extra creaminess.
  6. Top with sliced Cajun chicken and spoon a little sauce over.
  7. Finish with fresh parsley and serve hot.

Notes

  • Adjust the amount of Cajun seasoning to taste for desired spiciness.
  • For a lighter version, substitute heavy cream with half-and-half.
  • Can add vegetables like bell peppers or spinach for extra nutrition.
