- 4 salmon fillets, skin removed
- 2 cups fresh spinach
- ½ cup feta cheese, crumbled
- ¼ cup cream cheese, softened
- 1 tbsp olive oil
- 1 tsp garlic, minced
- ½ tsp lemon zest
- ½ tsp dried dill
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F and line a baking dish with parchment paper.
- Sauté spinach and garlic in olive oil until wilted; cool slightly.
- In a bowl, mix spinach, feta, cream cheese, lemon zest, dill, salt, and pepper.
- Lay each salmon fillet flat, spread with filling, and roll tightly; secure with toothpicks.
- Place rolls seam side down in the baking dish, drizzle lightly with olive oil.
- Bake for 20–25 minutes until salmon is flaky and golden.
- Serve with a squeeze of lemon and garnish with herbs.
