Description

Tender salmon fillets rolled with creamy spinach and feta filling—rich, elegant, and melt-in-your-mouth delicious.


Ingredients

  • 4 salmon fillets, skin removed
  • 2 cups fresh spinach
  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • 1 tbsp olive oil
  • 1 tsp garlic, minced
  • ½ tsp lemon zest
  • ½ tsp dried dill
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking dish with parchment paper.
  2. Sauté spinach and garlic in olive oil until wilted; cool slightly.
  3. In a bowl, mix spinach, feta, cream cheese, lemon zest, dill, salt, and pepper.
  4. Lay each salmon fillet flat, spread with filling, and roll tightly; secure with toothpicks.
  5. Place rolls seam side down in the baking dish, drizzle lightly with olive oil.
  6. Bake for 20–25 minutes until salmon is flaky and golden.
  7. Serve with a squeeze of lemon and garnish with herbs.
