- 8 oz whipped topping (or whipped cream)
- 1 package strawberry gelatin powder
- 1 ½ cups golden sandwich cookies (crushed)
- ¼ cup melted butter
- 2 tbsp granulated sugar
- Fresh strawberries (for topping)
- 1 tsp vanilla extract
Instructions
- Mix crushed cookies with melted butter to form the crunchy base.
- Press a layer of cookie crunch into the bottom of clear dessert cups.
- Beat cream cheese with sugar and vanilla until smooth.
- Fold in whipped topping and strawberry gelatin powder for a pink cheesecake filling.
- Spoon cheesecake layer over the crunch base.
- Add a strawberry sauce or crushed strawberry layer if desired, then repeat layers.
- Chill until set, then top with whipped cream, extra crunch, and a strawberry slice.
Notes
- For a more intense strawberry flavor, add fresh strawberries between layers.
- These cups can be made a day in advance for convenience.
