Instructions

  1. If using fresh strawberries, cook down with sugar until thickened to make jam; let cool.
  2. Cream butter and sugar, then mix in egg and vanilla until fluffy.
  3. Stir in flour and baking powder to form a soft dough.
  4. Roll dough into rounds, spoon strawberry jam in the center, and cover with another round to seal.
  5. Bake 12–15 minutes until edges are lightly golden.
  6. Mix powdered sugar, milk, and vanilla into a smooth glaze; spread over cooled cookies.
