Instructions
- If using fresh strawberries, cook down with sugar until thickened to make jam; let cool.
- Cream butter and sugar, then mix in egg and vanilla until fluffy.
- Stir in flour and baking powder to form a soft dough.
- Roll dough into rounds, spoon strawberry jam in the center, and cover with another round to seal.
- Bake 12–15 minutes until edges are lightly golden.
- Mix powdered sugar, milk, and vanilla into a smooth glaze; spread over cooled cookies.
- Finish with rainbow sprinkles and serve.
