Description
Tender, slow-simmered pork in a rich coconut-spiced sauce with just the right balance of warmth and sweetness.
Ingredients

- 2 lbs Pork shoulder, cubed
- 1 can Coconut milk
- 1 Red bell pepper, diced
- 1 Yellow bell pepper, diced
- 1 Scotch bonnet or chili pepper, chopped
- 1 Onion, sliced
- 4 cloves Garlic, minced
- 1 inch Fresh ginger, grated
- 2 tbsp Tomato paste
- 2 cups Chicken or pork stock
- 1 tsp Thyme
- 1 tsp Allspice
- 1 tsp Paprika
- Pinch of Cinnamon
- 2 tbsp Lime juice
- 2 tbsp Olive oil
- Salt & black pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Season pork with salt, pepper, allspice, and paprika.
- Brown pork in olive oil until deeply golden; remove and set aside.
- Sauté onion, garlic, and ginger until fragrant and soft.
- Stir in tomato paste, peppers, thyme, and chili; cook briefly.
- Return pork to pot, add coconut milk and stock to just cover.
- Simmer gently 2–3 hours until pork is fall-apart tender and sauce thickens.
- Finish with lime juice and fresh herbs before serving.
Notes
- Adjust the heat level by using more or less chili pepper.
- Serve with rice or bread to soak up the sauce.
- Can be made a day ahead for better flavor.
