Description

Tender, slow-simmered pork in a rich coconut-spiced sauce with just the right balance of warmth and sweetness.


Ingredients

Scale
  • 2 lbs Pork shoulder, cubed
  • 1 can Coconut milk
  • 1 Red bell pepper, diced
  • 1 Yellow bell pepper, diced
  • 1 Scotch bonnet or chili pepper, chopped
  • 1 Onion, sliced
  • 4 cloves Garlic, minced
  • 1 inch Fresh ginger, grated
  • 2 tbsp Tomato paste
  • 2 cups Chicken or pork stock
  • 1 tsp Thyme
  • 1 tsp Allspice
  • 1 tsp Paprika
  • Pinch of Cinnamon
  • 2 tbsp Lime juice
  • 2 tbsp Olive oil
  • Salt & black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Season pork with salt, pepper, allspice, and paprika.
  2. Brown pork in olive oil until deeply golden; remove and set aside.
  3. Sauté onion, garlic, and ginger until fragrant and soft.
  4. Stir in tomato paste, peppers, thyme, and chili; cook briefly.
  5. Return pork to pot, add coconut milk and stock to just cover.
  6. Simmer gently 2–3 hours until pork is fall-apart tender and sauce thickens.
  7. Finish with lime juice and fresh herbs before serving.

Notes

  • Adjust the heat level by using more or less chili pepper.
  • Serve with rice or bread to soak up the sauce.
  • Can be made a day ahead for better flavor.
