Ingredients

  • 2 cups sugar cookie dough
  • 1 cup vanilla custard or pastry cream
  • 4 oz semi-sweet chocolate
  • 1/2 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Prepare sugar cookie dough and chill briefly for easier handling.
  2. Scoop dough, flatten slightly, and bake at 350°F (175°C) until just set and lightly golden. Cool completely.
  3. Pipe or spoon vanilla custard onto the bottom of half the cookies.
  4. Top with remaining cookies to form filled sandwich cookies.
  5. Heat heavy cream and pour over chopped chocolate to make ganache.
  6. Spoon or drizzle ganache over the tops of the cookies.
  7. Let set until ganache firms before serving.
